About Eckhart Beer Company:
Eckhart Beer Co. is a new, 8000-square-foot 10bbl brewery and taproom in Brooklyn, specializing in European- style lagers. Eckhart will bring the best of the European lager beer tradition–from raw ingredients, to brewing process, to hospitality–to the heart of Brooklyn. Eckhart will embrace a “narrow-but-deep” approach to the craft brewing movement, featuring a small range of beers but focusing on perfection, tradition, and authenticity at all levels. Eckhart will have a fully built-out, 100-seat taproom with a full kitchen, and we intend to create a welcoming and convivial space that is a destination for casual beer drinkers and aficionados alike.
The heart of Eckhart’s menu is food that goes well with beer and brings people together. We aim to reflect a thoughtful, concise and seasonally relevant approach to food that supports the quality and style of beer being brewed and served. The food program strives to find a through-line from the brewery to the taproom using both ingredients found in beer as well as byproducts of the brewing process along with fresh, interesting and quality ingredients to make a complete dining experience with a respect to the culinary heritage of those regions where these beers have been traditionally brewed.
Job Description: Prep Cook
Who We Are Looking For
- Experienced prep cooks are preferred, but a willingness to learn is also valued
- A strong desire to learn and develop alongside our growing team
- Flexible availability, as our business will be expanding
- Ability to work nights and weekends
- Ability to manage high-pressure situations calmly and effectively
- Ability to work collaboratively and foster a positive environment
- Strong attention to detail
- Legal documentation of US work status is non-negotiable
- NYC Food Handler's License is a plus
Responsibilities
- Maintaining a professional and respectful demeanor at all times
- Arriving to work punctually and dressed in the required uniform, including non-slip shoes, pants, snap shirt, apron, and hat or hairnet
- Setting up your station with sanitizer buckets and rags
- Keeping knives sharp and tools clean
- Cleaning work areas
- Breaking down stations and cleaning the kitchen before lunch break
- Breaking down stations and cleaning the kitchen at closing time
- Participating in deep cleaning on a weekly/monthly basis
- Maintaining temperature logs for refrigeration and cooking proteins
- Understanding all menu items and prepping them accordingly
- Following prep lists provided by chefs and creating prep lists as needed
- Assisting in receiving deliveries and properly storing food in the walk-in
- Cleaning all produce and stocking it using FIFO
- Preparing items for overnight stock
- Preparing items in batches to prevent waste
- Following recipes as instructed by the chef
- Labeling all items properly with name and date
- Minimizing waste to control cost and product loss
- Composting vegetable and protein waste according to the chef's instructions
- Documenting waste in logs
- Reporting any 86'd items to the chef or sous chef
- Working effectively in a fast-paced environment
- Communicating effectively and respectfully with all staff
- Ability to lift 50lbs.
- Standing for long periods and performing repetitive tasks
- Performing any other tasks as needed within the general scope of the job, as requested by the owner, chef, sous chef, or other managers
